National Tikka Week | Yellow Chicken Curry Recipe
Happy National Tikka Week! To kick off Tikka Week, we are sharing a yellow chicken curry recipe. You can create this curry dish recipe in 45 minutes or less. So, this curry recipe can be made in one pot.
National Tikka Week | Recipe Ingredients
- 3 tablespoons olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 3 tablespoons curry powder
- 1 teaspoon ground cinnamon
- 1 teaspoon paprika
- ½ teaspoon grated fresh ginger root
- 1 bay leaf
- ½ teaspoon white sugar
- Salt to taste
- 2 skinless, boneless chicken breast halves – cut into bite-size pieces
- 1 tablespoon tomato paste
- 1 cup plain yogurt
- ¾ cup coconut milk
- ½ lemon, juiced
- ½ teaspoon cayenne pepper
To prep for your national Tikka Week meal, heat oil in a large pot over medium heat. Next, add in onion until lightly browned. Stir in garlic, curry powder, cinnamon, paprika, bay leaf, ginger, sugar, and salt. Continue to cook for two minutes.
Next, add chicken, tomato paste, yogurt, and coconut milk. Bring to a boil, reduce heat, and simmer for 20 to 25 minutes. This is when you will begin to smell the flavors of your curry!
Finally, remove bay leaf, stir in lemon juice and add cayenne pepper. Then, simmer for five more minutes. Now, taste your curry. Then, if you are looking for a spicier flavor, consider adding in some extra heat.
To richen flavor, add cracked red pepper flakes or red curry paste for more heat. Personalizing with traditional flavors is our favorite way to share a meal.
When finished, divide curry among bowls with rice to serve.
